Mrs. Smith’s Taco Casserole

This a recipe enjoyed by CofCC Field Coordinator Bill Lord and his family, passed to them from fellow church members in Carroll County, Mississippi, and passed by them to everyone in the Council interested.  Enjoy.

INGREDIENTS

Ground beef, 1 pound
Chopped onion, small to medium
Velveeta cheese, 1/2 block (a whole block is 2 pounds)
Rotel Tomatoes & Chili Peppers, 2 cans (other brand names exist, but they must be cans of diced tomatoes and green chilies/chili peppers)
Fritos, 6 oz (half of a regular bag)
Shredded Lettuce, 8 oz bag
Whole Kernel Corn, 1 can, drained
Green Peppers, 2 whole (optional), chopped in small pieces
Plain tortilla chips (optional)
Taco Shells (optional)
Sour Cream (optional)
Taco Sauce (optional)

If you buy enough ingredients for two preparations (realizing that the Velvetta block and the Fritos bag are themselves enough for two already), it’ll set you back about $30 at the time of this writing.  What it will cost next year will be anybody’s guess.

PREPARATION

*  Brown the ground beef and the onions together.  Drain excess liquid fat when done.

*  Chop up the Velveeta into small squares, which should be between one-quarter and one-half inch long on one edge.

*  In a separate large bowl, place the Velveeta squares on the bottom, open the Rotel cans (do not drain the juice), and pour the contents of the cans on top of the cheese.  Microwave this bowl until the mixture is well melted but not the point where the cheese is burned.  This will take 5-10 minutes depending on the microwave.  But check frequently.  After the cheese is melted, stir the mixture.

*  In another large bowl, pour the browned ground beef and onion mix in the bottom.  Next layer is the drained corn and (optionally) the green peppers.  The third layer is the melted Velvetta/Rotel.  The fourth layer is the Fritos.  The top layer is the shredded lettuce.

*  Mix this all up with a large spoon — not a task for those with carpal tunnel.

*  Enjoy.  You can eat it with a fork or spoon, or dip plain tortilla chips into the casserole, or eat it inside taco shells.  Optionally, you can put sour cream and/or taco sauce on top of the casserole, even if you eat it within a taco shell.

Serves four regular people, or two taco fanatics.
